  • 14 oz smoked sausage, sliced into thick rounds
  • 1 1/2 lbs baby Yukon Gold potatoes, halved
  • 2 cups broccoli florets
  • 1 cup corn kernels
  • 4 tbsp unsalted butter, melted
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 400°F and cut four large sheets of heavy-duty foil.
  2. In a large bowl, combine chicken, sausage, potatoes, broccoli, and corn.
  3. In a small bowl, mix melted butter, olive oil, garlic, salt, pepper, smoked paprika, garlic powder, thyme, and oregano.
  4. Pour the garlic butter mixture over the chicken and vegetables and toss until everything is evenly coated.
  5. Divide the mixture evenly among the foil sheets, placing potatoes on the bottom and protein on top.
  6. Fold the foil tightly to seal each packet.
  7. Place packets on a baking sheet and bake 30 to 35 minutes until potatoes are tender and chicken is cooked through.
  8. Carefully open packets and broil for 3 to 5 minutes for slightly crisped edges if desired.
  9. Sprinkle with fresh parsley and serve directly in the foil packets.
