- 1 1/2 lbs boneless skinless chicken breasts, cut into chunks
- 14 oz smoked sausage, sliced into thick rounds
- 1 1/2 lbs baby Yukon Gold potatoes, halved
- 2 cups broccoli florets
- 1 cup corn kernels
- 4 tbsp unsalted butter, melted
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- 2 tbsp chopped fresh parsley
Instructions
- Preheat oven to 400°F and cut four large sheets of heavy-duty foil.
- In a large bowl, combine chicken, sausage, potatoes, broccoli, and corn.
- In a small bowl, mix melted butter, olive oil, garlic, salt, pepper, smoked paprika, garlic powder, thyme, and oregano.
- Pour the garlic butter mixture over the chicken and vegetables and toss until everything is evenly coated.
- Divide the mixture evenly among the foil sheets, placing potatoes on the bottom and protein on top.
- Fold the foil tightly to seal each packet.
- Place packets on a baking sheet and bake 30 to 35 minutes until potatoes are tender and chicken is cooked through.
- Carefully open packets and broil for 3 to 5 minutes for slightly crisped edges if desired.
- Sprinkle with fresh parsley and serve directly in the foil packets.
Notes
- Use aluminum foil heavy enough to seal tightly so the steam stays inside.
- You can substitute cauliflower or green beans for the broccoli if preferred.
- For extra flavor, squeeze fresh lemon juice over the packets before serving.
