- 1 1/2 pounds ground chicken
- 1 cup breadcrumbs (preferably panko)
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, finely chopped
- 1/2 cup finely chopped onion
- 2 large eggs
- 1/3 cup milk
- 2 teaspoons Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup shredded mozzarella cheese (optional)
- Glaze: 1/4 cup ketchup, 2 tablespoons grated Parmesan cheese, 1 tablespoon minced garlic, 1 teaspoon Worcestershire sauce (optional)
Instructions
- Preheat oven to 350°F (175°C). Line or grease a loaf pan.
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan, garlic, parsley, onion, eggs, milk, Italian seasoning, salt, and pepper. Mix gently to combine.
- Fold in mozzarella if desired.
- Shape mixture into a loaf and place in prepared pan.
- Mix glaze ingredients and spread evenly over top.
- Bake 55–65 minutes until internal temperature reaches 165°F (74°C).
- Let rest 10 minutes before slicing.
- Serve warm with your favorite sides.
Notes
- Do not overmix meat mixture to keep meatloaf tender.
- Leftovers can be stored in the fridge 3–4 days or frozen up to 3 months.
- Substitute ground turkey or lean beef if desired; adjust cooking times accordingly.
