  • 1 1/2 pounds ground chicken
  • 1 cup breadcrumbs (preferably panko)
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 1/2 cup finely chopped onion
  • 2 large eggs
  • 1/3 cup milk
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded mozzarella cheese (optional)
  • Glaze: 1/4 cup ketchup, 2 tablespoons grated Parmesan cheese, 1 tablespoon minced garlic, 1 teaspoon Worcestershire sauce (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line or grease a loaf pan.
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan, garlic, parsley, onion, eggs, milk, Italian seasoning, salt, and pepper. Mix gently to combine.
  3. Fold in mozzarella if desired.
  4. Shape mixture into a loaf and place in prepared pan.
  5. Mix glaze ingredients and spread evenly over top.
  6. Bake 55–65 minutes until internal temperature reaches 165°F (74°C).
  7. Let rest 10 minutes before slicing.
  8. Serve warm with your favorite sides.

Notes

  • Do not overmix meat mixture to keep meatloaf tender.
  • Leftovers can be stored in the fridge 3–4 days or frozen up to 3 months.
