Ingredients

  • 2 lb. chicken thighs, boneless, skinless
  • ½ cup soy sauce
  • 2 mangos
  • 3 garlic cloves
  • ½ tsp fresh ginger, grated
  • 2 tbsp water, or more as needed
  • Cilantro for garnish

Instructions

  1. Add chicken to a plastic bag or large baking dish.
  2. Make marinade: blend soy sauce, mangos, garlic, ginger, and water until smooth.
  3. Reserve ¼ cup of marinade, pour the rest over chicken, seal bag, and refrigerate 2-8 hours.
  4. Preheat grill to 400°F. Remove chicken from bag, shake off excess marinade.
  5. Grill chicken 6-7 minutes per side until fully cooked.
  6. Brush grilled chicken with reserved sauce and sprinkle with cilantro if desired.
