- 2 lb. chicken thighs, boneless, skinless
- ½ cup soy sauce
- 2 mangos
- 3 garlic cloves
- ½ tsp fresh ginger, grated
- 2 tbsp water, or more as needed
- Cilantro for garnish
Instructions
- Add chicken to a plastic bag or large baking dish.
- Make marinade: blend soy sauce, mangos, garlic, ginger, and water until smooth.
- Reserve ¼ cup of marinade, pour the rest over chicken, seal bag, and refrigerate 2-8 hours.
- Preheat grill to 400°F. Remove chicken from bag, shake off excess marinade.
- Grill chicken 6-7 minutes per side until fully cooked.
- Brush grilled chicken with reserved sauce and sprinkle with cilantro if desired.

- If using chicken breasts, adjust grilling time based on size; check internal temperature.
