Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil.
  2. Sauté onion and garlic in olive oil over medium heat until softened, about 2 minutes.
  3. Add ground turkey and cook until browned, breaking apart, about 5-6 minutes.
  4. Stir in drained tomatoes, Italian herbs, salt, and pepper. Simmer 3-4 minutes.
  5. Layer half the zucchini in the baking dish, top with half the turkey mixture and half the mozzarella. Repeat layers.
  6. Bake uncovered 30-35 minutes until bubbly and cheese is golden. Let rest 5 minutes before serving.
