  • 2 large sweet potatoes, peeled and chopped into 1-inch cubes
  • 1 large head broccoli, cut into bite-sized florets
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • ¼ cup honey
  • ¼ cup low-sodium soy sauce (or tamari for gluten-free)
  • 4 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (slurry)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss sweet potato cubes with olive oil, salt, and pepper in a large bowl. Spread on the baking sheet and roast for 15 minutes.
  3. Meanwhile, prepare the honey garlic sauce by combining honey, soy sauce, garlic, and apple cider vinegar in a small saucepan. Simmer over medium heat, whisk in cornstarch slurry, and cook 1–2 minutes until slightly thickened. Remove from heat.
  4. After 15 minutes, add sausage and broccoli to the sheet pan. Drizzle half the sauce over ingredients and toss gently to coat.
  5. Return to oven and roast 15–20 minutes until sweet potatoes are tender and broccoli is crisp-tender.
  6. Remove from oven, drizzle with remaining sauce, toss one last time, and serve immediately.
