- 14 ounces smoked sausage (like kielbasa), sliced into ½-inch rounds
- 2 large sweet potatoes, peeled and chopped into 1-inch cubes
- 1 large head broccoli, cut into bite-sized florets
- 1 tablespoon olive oil
- Salt and pepper, to taste
- ¼ cup honey
- ¼ cup low-sodium soy sauce (or tamari for gluten-free)
- 4 cloves garlic, minced
- 1 tablespoon apple cider vinegar
- 1 teaspoon cornstarch mixed with 1 tablespoon water (slurry)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss sweet potato cubes with olive oil, salt, and pepper in a large bowl. Spread on the baking sheet and roast for 15 minutes.
- Meanwhile, prepare the honey garlic sauce by combining honey, soy sauce, garlic, and apple cider vinegar in a small saucepan. Simmer over medium heat, whisk in cornstarch slurry, and cook 1–2 minutes until slightly thickened. Remove from heat.
- After 15 minutes, add sausage and broccoli to the sheet pan. Drizzle half the sauce over ingredients and toss gently to coat.
- Return to oven and roast 15–20 minutes until sweet potatoes are tender and broccoli is crisp-tender.
- Remove from oven, drizzle with remaining sauce, toss one last time, and serve immediately.
Notes
- Don’t overcrowd the pan to ensure vegetables roast instead of steam.
- Cut sweet potatoes into uniform 1-inch cubes for even cooking.
