- 1 lb (450 g) chicken breast, cut into pieces
- 2 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp honey
- 2 tbsp lime juice
- 1 tsp lime zest
- 1 tsp garlic, minced
- 1 cup (200 g) jasmine rice
- 2 cups (480 ml) water
- ¼ tsp salt
- ½ cup (75 g) feta cheese, crumbled
- Fresh parsley or cilantro for garnish
- Extra lime wedges for serving
Instructions
- Cook rice with water and salt according to package instructions. Fluff and set aside.
- Heat olive oil in a skillet over medium-high heat. Add chicken, salt, and black pepper. Cook for 6–8 minutes until golden and cooked through.
- In a small bowl, mix honey, lime juice, lime zest, and garlic.
- Pour glaze over chicken and cook for 2–3 minutes until glossy.
- Press rice into a mold and invert onto a plate to form a stack.
- Top with honey lime chicken and sprinkle with feta.
- Garnish with fresh herbs and serve with lime wedges immediately.
Notes
- Serve immediately for best texture and flavor.
- Optional: add avocado slices or roasted vegetables on the side.
