Ingredients

  • 1 lb (450 g) chicken breast, cut into pieces
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp honey
  • 2 tbsp lime juice
  • 1 tsp lime zest
  • 1 tsp garlic, minced
  • 1 cup (200 g) jasmine rice
  • 2 cups (480 ml) water
  • ¼ tsp salt
  • ½ cup (75 g) feta cheese, crumbled
  • Fresh parsley or cilantro for garnish
  • Extra lime wedges for serving

Instructions

  1. Cook rice with water and salt according to package instructions. Fluff and set aside.
  2. Heat olive oil in a skillet over medium-high heat. Add chicken, salt, and black pepper. Cook for 6–8 minutes until golden and cooked through.
  3. In a small bowl, mix honey, lime juice, lime zest, and garlic.
  4. Pour glaze over chicken and cook for 2–3 minutes until glossy.
  5. Press rice into a mold and invert onto a plate to form a stack.
  6. Top with honey lime chicken and sprinkle with feta.
  7. Garnish with fresh herbs and serve with lime wedges immediately.
