- 2–3 chicken breasts, cut into cubes
- Juice of 1/2 lime
- 1 teaspoon freshly ground black pepper
- 1 tablespoon olive oil
- 1 teaspoon baking powder
- The seasoning mix
- 1 tablespoon dried rosemary
- 1 tablespoon granulated garlic
- 1 teaspoon sea salt
- 1 tablespoon granulated onion
- 1 teaspoon dried lemon zest
- 1 teaspoon dried orange zest
- 1 teaspoon ground mustard seeds
- The sauce
- 3 tablespoons softened butter
- 1 habanero pepper, seeded and minced (optional)
- Zest of 1 lime
- Juice of 1/2 lime
- 1 tablespoon honey
- 1 teaspoon of the seasoning mix
- 1 teaspoon minced garlic
- 2 spring onions, sliced
Instructions
- Cut the chicken breasts into 1-inch cubes using a sharp knife and cutting board. Transfer to a large mixing bowl.
- Add lime juice, 2 tablespoons of the seasoning mix, black pepper, olive oil, and baking powder. Mix well to coat the chicken and marinate for at least 10 minutes.
- Soak bamboo skewers in water to prevent burning.
- Prepare the honey lime butter sauce: In a medium bowl, combine softened butter, minced habanero pepper, lime zest, lime juice, honey, one teaspoon of the seasoning mix, minced garlic, and sliced spring onion.
- Thread the marinated chicken pieces onto the skewers.
- Cook the chicken skewers on a hot grill for about 2 minutes per side, turning to cook all sides until nicely charred.
- Brush the grilled chicken skewers with the honey lime butter sauce.
- Transfer to a serving platter and serve immediately with extra sauce on the side.
Notes
- If you prefer less heat, skip the habanero pepper in the sauce.
- Chicken thighs can be used instead of chicken breasts for extra juiciness.
- Serve with grilled vegetables, rice, or a fresh salad.
