  • 1 teaspoon ground mustard seeds
  • The sauce
  • 3 tablespoons softened butter
  • 1 habanero pepper, seeded and minced (optional)
  • Zest of 1 lime
  • Juice of 1/2 lime
  • 1 tablespoon honey
  • 1 teaspoon of the seasoning mix
  • 1 teaspoon minced garlic
  • 2 spring onions, sliced

Instructions

  1. Cut the chicken breasts into 1-inch cubes using a sharp knife and cutting board. Transfer to a large mixing bowl.
  2. Add lime juice, 2 tablespoons of the seasoning mix, black pepper, olive oil, and baking powder. Mix well to coat the chicken and marinate for at least 10 minutes.
  3. Soak bamboo skewers in water to prevent burning.
  4. Prepare the honey lime butter sauce: In a medium bowl, combine softened butter, minced habanero pepper, lime zest, lime juice, honey, one teaspoon of the seasoning mix, minced garlic, and sliced spring onion.
  5. Thread the marinated chicken pieces onto the skewers.
  6. Cook the chicken skewers on a hot grill for about 2 minutes per side, turning to cook all sides until nicely charred.
  7. Brush the grilled chicken skewers with the honey lime butter sauce.
