  • 2 ripe mangoes, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 red bell pepper, diced
  • Juice of 1 lime
  • 1 tablespoon fresh cilantro, chopped
  • 1/2 jalapeño, finely chopped (optional)
  • Pinch of salt

Instructions

  1. Marinate the Chicken: Combine olive oil, lime juice and zest, honey, garlic, chili powder, salt, and pepper. Add chicken and marinate at least 30 minutes (up to 8 hours).
  2. Make the Mango Salsa: Mix mango, red onion, bell pepper, cilantro, lime juice, jalapeño, and salt. Chill 15–20 minutes for best flavor.
  3. Cook the Chicken: Grill over medium-high heat 5–6 minutes per side until internal temperature reaches 165°F. Rest 5 minutes before slicing.
  4. Serve: Top chicken generously with mango salsa. Garnish with extra cilantro or lime wedges and serve with rice, vegetables, or tortillas.
