For the Honey Lime Chicken:
- 4 boneless, skinless chicken breasts or thighs
- 3 tablespoons olive oil
- Juice and zest of 2 limes
- 3 tablespoons honey
- 2 garlic cloves, minced
- 1 teaspoon chili powder (optional)
- Salt and black pepper, to taste
For the Mango Salsa:
- 2 ripe mangoes, diced
- 1/4 cup red onion, finely chopped
- 1/2 red bell pepper, diced
- Juice of 1 lime
- 1 tablespoon fresh cilantro, chopped
- 1/2 jalapeño, finely chopped (optional)
- Pinch of salt
Instructions
- Marinate the Chicken: Combine olive oil, lime juice and zest, honey, garlic, chili powder, salt, and pepper. Add chicken and marinate at least 30 minutes (up to 8 hours).
- Make the Mango Salsa: Mix mango, red onion, bell pepper, cilantro, lime juice, jalapeño, and salt. Chill 15–20 minutes for best flavor.
- Cook the Chicken: Grill over medium-high heat 5–6 minutes per side until internal temperature reaches 165°F. Rest 5 minutes before slicing.
- Serve: Top chicken generously with mango salsa. Garnish with extra cilantro or lime wedges and serve with rice, vegetables, or tortillas.
