Ingredients

- 1 lb chicken breast, cubed
- 1/4 cup cornstarch
- 3/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp oil
- 15 oz pineapple chunks
- 1/4 cup ketchup
- 3 tbsp sugar
- 3 tbsp soy sauce
- 1 tbsp vinegar
- 1 lime
- 2 cloves garlic
- 1 tsp sriracha (optional)
- 2 bell peppers
- 1 red onion
Instructions
- Coat chicken with cornstarch, salt, and pepper.
- Sauté chicken in Instant Pot.
- Blend sauce ingredients.
- Add sauce and vegetables to pot.
- Pressure cook for 5 minutes.
- Natural release for 5 minutes.
- Stir and serve over rice.
Notes
- Scrape bottom of pot to avoid burn warning.
- Cut chicken evenly for best cooking.
- Adjust spice with sriracha.
