Ingredients

  • 1 lb chicken breast, cubed
  • 1/4 cup cornstarch
  • 3/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp oil
  • 15 oz pineapple chunks
  • 1/4 cup ketchup
  • 3 tbsp sugar
  • 3 tbsp soy sauce
  • 1 tbsp vinegar
  • 1 lime
  • 2 cloves garlic
  • 1 tsp sriracha (optional)
  • 2 bell peppers
  • 1 red onion

Instructions

  1. Coat chicken with cornstarch, salt, and pepper.
  2. Sauté chicken in Instant Pot.
  3. Blend sauce ingredients.
  4. Add sauce and vegetables to pot.
  5. Pressure cook for 5 minutes.
  6. Natural release for 5 minutes.
  7. Stir and serve over rice.

Notes

  • Scrape bottom of pot to avoid burn warning.
  • Cut chicken evenly for best cooking.
  • Adjust spice with sriracha.
