Ingredients

  • 1.5 lbs boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 3 cups broccoli florets (fresh or frozen)
  • 2 tablespoons olive oil or avocado oil
  • Salt and black pepper to taste
  • 4 tablespoons unsalted butter
  • 6 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup chicken broth (low-sodium preferred)
  • 3/4 cup freshly grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 teaspoons xanthan gum or 1 tablespoon cream cheese (optional, for thickening)

Instructions

  1. Cut chicken into 1-inch pieces, pat dry, and season with salt and pepper. Prepare broccoli and mince garlic.
  2. Heat oil in a large skillet over medium-high heat. Cook chicken in a single layer for 3–4 minutes per side until golden and cooked through. Remove and set aside.
  3. Reduce heat to medium, add butter, then sauté garlic for 60–90 seconds until fragrant.
  4. Pour in chicken broth and scrape browned bits. Add heavy cream, Italian seasoning, and red pepper flakes. Simmer for 3–4 minutes.
  5. Lower heat and whisk in parmesan cheese until smooth. Return chicken and add broccoli, stirring to coat.
  6. Simmer on medium-low for 5–7 minutes until broccoli is tender. Adjust seasoning. If needed, thicken with xanthan gum or cream cheese.
