- 1.5 lbs boneless, skinless chicken breasts (cut into bite-sized pieces)
- 3 cups broccoli florets (fresh or frozen)
- 2 tablespoons olive oil or avocado oil
- Salt and black pepper to taste
- 4 tablespoons unsalted butter
- 6 cloves garlic (minced)
- 1 cup heavy cream
- 1 cup chicken broth (low-sodium preferred)
- 3/4 cup freshly grated parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- 2 teaspoons xanthan gum or 1 tablespoon cream cheese (optional, for thickening)
Instructions
- Cut chicken into 1-inch pieces, pat dry, and season with salt and pepper. Prepare broccoli and mince garlic.
- Heat oil in a large skillet over medium-high heat. Cook chicken in a single layer for 3–4 minutes per side until golden and cooked through. Remove and set aside.
- Reduce heat to medium, add butter, then sauté garlic for 60–90 seconds until fragrant.
- Pour in chicken broth and scrape browned bits. Add heavy cream, Italian seasoning, and red pepper flakes. Simmer for 3–4 minutes.
- Lower heat and whisk in parmesan cheese until smooth. Return chicken and add broccoli, stirring to coat.
- Simmer on medium-low for 5–7 minutes until broccoli is tender. Adjust seasoning. If needed, thicken with xanthan gum or cream cheese.

- Use fresh or frozen broccoli depending on availability.
- Xanthan gum or cream cheese helps thicken the sauce if desired.
- Great served on its own or over cauliflower rice.
