- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tbsp olive oil
- 1 cup dry orzo pasta
- 2 cups chicken broth, low-sodium recommended
- 1 cup heavy cream
- 1 cup fresh chopped spinach
- ½ cup grated Parmesan cheese plus extra for garnish
- 1 tsp garlic powder
- 1 tsp Italian seasoning
Instructions
- Season chicken with salt and pepper. Cook in olive oil over medium heat 6–7 minutes per side until golden and cooked through. Remove from skillet.
- In the same skillet, pour in chicken broth and bring to a gentle simmer.
- Add orzo, garlic powder, and Italian seasoning. Stir occasionally and cook 10–12 minutes until orzo is tender and creamy.
- Add heavy cream, chopped spinach, and Parmesan. Stir until creamy and combined.
- Slice the cooked chicken and place on top of the orzo. Garnish with additional Parmesan and serve warm.
Notes
- For a lighter option, replace heavy cream with half-and-half or plant-based cream.
