Ingredients

  • 2 cups chopped bell peppers (mixed colors)
  • 1 large zucchini, sliced
  • 1 red onion, sliced
  • 1 cup cherry tomatoes
  • ½ cup Kalamata olives
  • 3 tbsp olive oil
  • 1 tbsp dried oregano
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup crumbled feta cheese (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine bell peppers, zucchini, red onion, cherry tomatoes, olives, olive oil, oregano, garlic powder, salt, and pepper.
  3. Spread mixture evenly on a baking sheet.
  4. Roast for 25–30 minutes, stirring halfway through.
  5. Sprinkle with feta cheese before serving if desired.
