- 2 cups chopped bell peppers (mixed colors)
- 1 large zucchini, sliced
- 1 red onion, sliced
- 1 cup cherry tomatoes
- ½ cup Kalamata olives
- 3 tbsp olive oil
- 1 tbsp dried oregano
- 1 tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup crumbled feta cheese (optional)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine bell peppers, zucchini, red onion, cherry tomatoes, olives, olive oil, oregano, garlic powder, salt, and pepper.
- Spread mixture evenly on a baking sheet.
- Roast for 25–30 minutes, stirring halfway through.
- Sprinkle with feta cheese before serving if desired.

- Use any vegetables you prefer.
- Add fresh lemon juice for extra brightness.
- Serve warm or at room temperature.
