- 1 pound kielbasa, sliced
- 2 tablespoons honey
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup baby carrots
- 1 pound baby potatoes, halved
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley or green onions, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Gather all ingredients.
- In a large mixing bowl, combine sliced kielbasa, bell peppers, baby carrots, and baby potatoes. Drizzle with olive oil, then add honey, minced garlic, and soy sauce. Toss until evenly coated.
- Line a large baking sheet with parchment paper. Spread the mixture evenly in a single layer.
- Roast for 20–25 minutes, stirring halfway through, until vegetables are tender and kielbasa is caramelized.
- Remove from the oven and garnish with freshly chopped parsley or green onions. Serve hot.
Notes
- Vegetables can be chopped in advance to save time.
- Adjust cooking time if using larger or irregularly sized vegetables.
- Substitute zucchini, asparagus, or sweet potatoes for variety.
