- 1 lb medium shrimp, peeled
- 1 tablespoon flour
- 1 tablespoon Cajun seasoning, divided
- 1 tablespoon salt, divided
- 3 tablespoons olive oil, divided
- 1 medium onion, diced
- 3 stalks celery, diced
- 1 green bell pepper, diced
- 5 cloves garlic, thinly sliced
- 1 red bell pepper, diced
- 1 cup orzo
- 3 cups water or broth
- 1/2 cup heavy cream
- 1 cup frozen peas
Instructions
- Toss the peeled shrimp with flour, half the Cajun seasoning, and half the salt.
- Heat 2 tablespoons olive oil in a pot over medium-high heat. Sear the shrimp about 2 minutes each side until pink. Remove and set aside.
- Add remaining olive oil and cook onion, celery, green bell pepper, and red bell pepper for 5–7 minutes until softened.
- Add garlic and cook 1 minute until fragrant.
- Stir in remaining Cajun seasoning and salt.
- Add orzo and stir to coat.
- Pour in water or broth, bring to a boil, then reduce heat, cover, and simmer 12–15 minutes until orzo absorbs most liquid.
- Return shrimp to the pot, add heavy cream and peas, stir until creamy and heated through. Serve immediately.
