Ingredients

  • 1 lb medium shrimp, peeled
  • 1 tablespoon flour
  • 1 tablespoon Cajun seasoning, divided
  • 1 tablespoon salt, divided
  • 3 tablespoons olive oil, divided
  • 1 medium onion, diced
  • 3 stalks celery, diced
  • 1 green bell pepper, diced
  • 5 cloves garlic, thinly sliced
  • 1 red bell pepper, diced
  • 1 cup orzo
  • 3 cups water or broth
  • 1/2 cup heavy cream
  • 1 cup frozen peas

Instructions

  1. Toss the peeled shrimp with flour, half the Cajun seasoning, and half the salt.
  2. Heat 2 tablespoons olive oil in a pot over medium-high heat. Sear the shrimp about 2 minutes each side until pink. Remove and set aside.
  3. Add remaining olive oil and cook onion, celery, green bell pepper, and red bell pepper for 5–7 minutes until softened.
  4. Add garlic and cook 1 minute until fragrant.
  5. Stir in remaining Cajun seasoning and salt.
  6. Add orzo and stir to coat.
  7. Pour in water or broth, bring to a boil, then reduce heat, cover, and simmer 12–15 minutes until orzo absorbs most liquid.
  8. Return shrimp to the pot, add heavy cream and peas, stir until creamy and heated through. Serve immediately.
