  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon fresh ground black pepper
  • 1 tablespoon cornstarch
  • 1 cup beef broth
  • 8 ounces provolone cheese slices, chopped
  • 6 brioche hamburger buns

Instructions

  1. Heat a large cast iron skillet over medium-high heat. Add the ground beef and cook until it develops a deep brown crust before breaking it apart. Continue cooking until about half of the beef has browned.
  2. Remove the beef from the skillet, leaving the rendered fat. Add butter, diced onion, bell pepper, and minced mushrooms to the skillet.
  3. Allow the vegetables to brown for 1–2 minutes without stirring, then stir and cook another 1–2 minutes until lightly caramelized.
  4. Return the cooked beef to the skillet with the vegetables.
  5. In a small cup, whisk together the beef broth and cornstarch until smooth. Pour into the skillet along with ketchup, Worcestershire sauce, salt, and pepper.
  6. Cook the mixture for 3–5 minutes until the sauce thickens and coats the beef and vegetables.
  7. Turn off the heat and stir in the chopped provolone cheese until melted and creamy.
  8. Serve the mixture piled onto toasted brioche buns.
