- 1 cup Granulated Sugar
- 1 teaspoon Orange Zest
- 2 teaspoons Vanilla Extract
- ½ cup Vegetable Oil
- ¾ cup Milk
- 2 large Eggs
- 2 cups All-Purpose Flour
- ½ teaspoon Salt
- 1½ teaspoons Baking Powder
- 2 cups Fresh Rhubarb (diced)
- ½ cup Powdered Sugar
- 2–3 tablespoons Heavy Whipping Cream
- 1–2 drops Orange Oil
Instructions
- Preheat oven to 350°F. Grease a 9×5-inch loaf pan.
- Mix sugar, orange zest, vanilla extract, vegetable oil, milk, and eggs until smooth.
- Sift together flour, salt, and baking powder.
- Fold flour mixture into wet ingredients until just combined.
- Gently mix in diced rhubarb.
- Pour batter into prepared pan and smooth the top.
- Bake 55–60 minutes until toothpick comes out clean.
- Cool 10 minutes in pan, then transfer to wire rack.
- Whisk powdered sugar, cream, and orange oil to make glaze. Drizzle over cooled bread.
Notes
- Using vegetable oil adds extra moisture to the bread.
- Avoid overmixing to keep the bread tender.
- Cool on a wire rack before glazing to prevent puddles.
