Ingredients
- For the Crust: 2 cups all-purpose flour, 1/2 cup powdered sugar, 1 cup butter, cold and cubed
- For the Filling: 4 large eggs, 2 cups granulated sugar, 1/2 cup all-purpose flour, 1 teaspoon salt, 4 cups diced rhubarb, Optional: 1/2 teaspoon ground cinnamon
Instructions
- Preheat oven to 325°F. Grease a 9×13 pan.
- Mix flour and powdered sugar for crust. Cut in butter until crumbly.
- Press into pan and bake 15 minutes.
- Beat eggs, then stir in sugar, flour, salt, and cinnamon. Fold in rhubarb and pour over hot crust.
- Bake 60 minutes until center is set.
- Cool completely before slicing.
Notes
- Thaw and drain frozen rhubarb before using.
- Chill overnight for best texture.
- Add chopped nuts for a crunchy twist.
- Cinnamon is optional but adds warmth.
