  • Total Time: 30 minutes
  • Yield: 4 bowls

Ingredients

Scale
  • For the bowl base:
  • 1 lb ground beef (or ground turkey or plant-based crumbles)
  • 4 medium red potatoes (or riced cauliflower for low-carb)
  • For the flavors:
  • 1 medium onion, diced
  • 1 cup shredded Colby Jack or pepper jack cheese
  • For the sauce:
  • 1/2 cup mayo or Greek yogurt

  • 1 tablespoon Dijon mustard
  • 1 tablespoon Cajun seasoning
  • For the toppings:
  • 1 cup pickles or cucumbers
  • 2 cups lettuce (any mix)

Instructions

  1. Dice potatoes into small pieces. Toss with olive oil, salt, and pepper, then air fry at 400°F (200°C) for 16-18 minutes until crispy.
  2. Heat oil in a skillet over medium heat. Add onions and cook for 10-15 minutes until caramelized.
  3. Increase heat to medium-high, add ground beef, and smash for even searing. Cook 5-7 minutes until browned. Drain fat and season.
  4. In a bowl, whisk together mayo, ketchup, mustard, and Cajun seasoning until smooth.
  5. Assemble bowls with potatoes, beef, onions, cheese, and drizzle sauce. Top with pickles and lettuce.

Notes

  • Use cauliflower instead of potatoes for a low-carb option.
  • Customize protein with turkey or plant-based alternatives.
