- 1 lb ground beef (or ground turkey or plant-based crumbles)
- 4 medium red potatoes (or riced cauliflower for low-carb)
- For the flavors:
- 1 medium onion, diced
- 1 cup shredded Colby Jack or pepper jack cheese
- For the sauce:
- 1/2 cup mayo or Greek yogurt
- 1/4 cup ketchup (low-sugar)
- 1 tablespoon Dijon mustard
- 1 tablespoon Cajun seasoning
- For the toppings:
- 1 cup pickles or cucumbers
- 2 cups lettuce (any mix)
Instructions
- Dice potatoes into small pieces. Toss with olive oil, salt, and pepper, then air fry at 400°F (200°C) for 16-18 minutes until crispy.
- Heat oil in a skillet over medium heat. Add onions and cook for 10-15 minutes until caramelized.
- Increase heat to medium-high, add ground beef, and smash for even searing. Cook 5-7 minutes until browned. Drain fat and season.
- In a bowl, whisk together mayo, ketchup, mustard, and Cajun seasoning until smooth.
- Assemble bowls with potatoes, beef, onions, cheese, and drizzle sauce. Top with pickles and lettuce.
