- 4 boneless, skinless chicken breasts (about 2 pounds)
- 1 cup pineapple juice
- 1 cup diced pineapple (fresh or canned)
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/4 teaspoon black pepper
- Sliced green onions (optional)
- Red pepper flakes (optional)
- Bell peppers (optional)
- Fresh cilantro or parsley (for garnish)
- Sesame seeds (for garnish)
Instructions
- Prepare chicken breasts. Leave whole or cut into smaller pieces and place at the bottom of the crockpot.
- In a bowl, mix pineapple juice, diced pineapple, soy sauce, brown sugar, minced garlic, ground ginger, and black pepper until sugar dissolves.
- Pour the mixture over the chicken, coating all pieces in sauce.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is fully cooked and tender.
- Shred chicken with two forks and mix back into the sauce.
- Serve hot with toppings like green onions or sesame seeds, alongside your favorite sides.
