Instructions

  1. Lightly grease the slow cooker with cooking spray or olive oil.
  2. Place chicken breasts in the bottom of the slow cooker.
  3. In a bowl, whisk together chicken broth, heavy cream, Parmesan cheese, garlic, Italian seasoning, salt, and black pepper.
  4. Pour the mixture over the chicken, ensuring it is well coated.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is tender and cooked through.
  6. If using spinach, stir it in during the last 30 minutes of cooking.
  7. Shred the chicken in the sauce or serve whole. Garnish with chopped parsley before serving.
