- 4 boneless, skinless chicken breasts
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 tablespoon minced garlic
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup fresh spinach (optional, add during last 30 minutes)
- 1/2 cup chopped parsley (for garnish)
Instructions
- Lightly grease the slow cooker with cooking spray or olive oil.
- Place chicken breasts in the bottom of the slow cooker.
- In a bowl, whisk together chicken broth, heavy cream, Parmesan cheese, garlic, Italian seasoning, salt, and black pepper.
- Pour the mixture over the chicken, ensuring it is well coated.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is tender and cooked through.
- If using spinach, stir it in during the last 30 minutes of cooking.
- Shred the chicken in the sauce or serve whole. Garnish with chopped parsley before serving.
- Serve over pasta, rice, or alongside vegetables.
Notes
- For a lighter version, substitute heavy cream with half-and-half or low-fat cream.
- Adjust seasoning to taste before serving.
