  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian herbs
  • Salt, to taste
  • Pepper, to taste
  • 1 pound baby potatoes, halved
  • 1/2 cup unsalted butter
  • 1/4 cup chicken broth
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian herbs, salt, and pepper. Mix well and form into 1-inch meatballs.
  2. Place halved baby potatoes in the bottom of the slow cooker.
  3. Arrange meatballs on top of the potatoes.
  4. In a small saucepan over medium heat, melt butter. Stir in chicken broth and whisk to combine. Pour over meatballs and potatoes.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until meatballs are cooked through and potatoes are tender.
  6. Gently stir before serving and garnish with chopped fresh parsley.
