- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 3 cloves garlic, minced
- 1 teaspoon dried Italian herbs
- Salt, to taste
- Pepper, to taste
- 1 pound baby potatoes, halved
- 1/2 cup unsalted butter
- 1/4 cup chicken broth
- Fresh parsley, chopped (for garnish)
Instructions
- In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian herbs, salt, and pepper. Mix well and form into 1-inch meatballs.
- Place halved baby potatoes in the bottom of the slow cooker.
- Arrange meatballs on top of the potatoes.
- In a small saucepan over medium heat, melt butter. Stir in chicken broth and whisk to combine. Pour over meatballs and potatoes.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until meatballs are cooked through and potatoes are tender.
- Gently stir before serving and garnish with chopped fresh parsley.

- Serve with a side salad or steamed vegetables for a complete meal.
