- 3-4 pounds bone-in pork ribs (baby back or spare ribs)
- 1 cup pineapple juice
- 1/2 cup soy sauce (low sodium preferred)
- 1/4 cup brown sugar, packed
- 1/4 cup honey
- 2 tablespoons rice vinegar
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon ground ginger
- 1/2 teaspoon red pepper flakes (optional)
- 1/4 teaspoon black pepper
Instructions
- In a mixing bowl, whisk together pineapple juice, soy sauce, brown sugar, honey, rice vinegar, minced garlic, fresh ginger, ground ginger, red pepper flakes (if using), and black pepper.
- Place the ribs in the slow cooker.
- Pour the sauce over the ribs, ensuring they are evenly coated.
- Cook on LOW for 6–8 hours, until the ribs are fall-off-the-bone tender.
- Remove the ribs from the slow cooker and let rest for a few minutes before serving.
- Serve immediately and enjoy.
Notes
- For extra flavor, add a tablespoon of your favorite BBQ sauce during the last 30 minutes of cooking.
- Optionally, broil the ribs for a few minutes at the end to achieve a caramelized finish.
