Ingredients

  • 3-4 pounds bone-in pork ribs (baby back or spare ribs)
  • 1 cup pineapple juice
  • 1/2 cup soy sauce (low sodium preferred)
  • 1/4 cup brown sugar, packed
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground ginger
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 teaspoon black pepper

Instructions

  1. In a mixing bowl, whisk together pineapple juice, soy sauce, brown sugar, honey, rice vinegar, minced garlic, fresh ginger, ground ginger, red pepper flakes (if using), and black pepper.
  2. Place the ribs in the slow cooker.
  3. Pour the sauce over the ribs, ensuring they are evenly coated.
  4. Cook on LOW for 6–8 hours, until the ribs are fall-off-the-bone tender.
  5. Remove the ribs from the slow cooker and let rest for a few minutes before serving.
  6. Serve immediately and enjoy.

Notes

  • For extra flavor, add a tablespoon of your favorite BBQ sauce during the last 30 minutes of cooking.
