- 1 lb lean ground beef
- 1/2 yellow onion, chopped
- 2 cloves garlic, minced
- 2 (15 oz) cans tomato sauce
- 1 teaspoon Italian seasoning
- 8 oz egg noodles
- 1 cup sour cream
- 1 cup cottage cheese
- 1 cup cheddar cheese, grated
- Kosher salt and freshly ground black pepper, to taste
Instructions
- Preheat oven to 350°F and grease a 9×13-inch baking dish with nonstick spray.
- In a large skillet over medium-high heat, cook the ground beef and chopped onion until the beef is browned and cooked through, about 10 minutes. Add minced garlic and cook for another minute.
- Stir in the tomato sauce and Italian seasoning. Let the mixture simmer for 5 minutes, stirring occasionally. Season with salt and pepper to taste. Remove from heat.
- Cook the egg noodles in a large pot of salted boiling water according to package instructions. Drain and set aside.
- In a large bowl, combine sour cream and cottage cheese. Add the cooked egg noodles and season lightly with salt and pepper. Mix until evenly combined.
- Spread half of the noodle mixture in the prepared baking dish. Top with half of the meat sauce. Repeat the layers with the remaining noodles and meat sauce.
- Sprinkle grated cheddar cheese evenly over the top. Bake for about 30 minutes until the casserole is bubbly and the cheese has melted.
- Allow the casserole to cool for 10 minutes before serving.
Notes
- This casserole can be prepared ahead of time and refrigerated before baking.
- Use ground turkey instead of beef for a lighter version.
- Leftovers store well in the refrigerator for up to 3 days.
