Spinach & Mozzarella Stuffed Chicken with Garlic Glaze is a rich and flavorful dish featuring tender chicken breasts stuffed with spinach and mozzarella, finished with a sweet garlic glaze.

Ingredients

  • 4 chicken breasts
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 cups (60 g) fresh spinach, chopped
  • 1 cup (100 g) mozzarella cheese, shredded
  • 2 cloves garlic, minced
  • 1 tbsp butter
  • 2 tbsp butter (for glaze)
  • 2 cloves garlic, minced (for glaze)
  • 1 tbsp honey
  • 1 tbsp lemon juice
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat 1 tbsp butter in a skillet over medium heat. Add garlic and sauté for 30 seconds.
  3. Add spinach and cook until wilted. Remove from heat and mix with mozzarella cheese.
  4. Cut a pocket into each chicken breast.
  5. Stuff with spinach and cheese mixture and secure if needed.
  6. Season with salt and black pepper.
  7. Heat olive oil in a skillet and sear chicken for 3–4 minutes per side until golden.
  8. Transfer to oven and bake for 18–22 minutes until fully cooked.
  9. In a small pan, melt 2 tbsp butter and sauté garlic, then stir in honey and lemon juice.
  10. Drizzle garlic glaze over chicken before serving.
  11. Garnish with fresh parsley and serve warm.
