- 4 chicken breasts
- 2 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- 2 cups (60 g) fresh spinach, chopped
- 1 cup (100 g) mozzarella cheese, shredded
- 2 cloves garlic, minced
- 1 tbsp butter
- 2 tbsp butter (for glaze)
- 2 cloves garlic, minced (for glaze)
- 1 tbsp honey
- 1 tbsp lemon juice
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Heat 1 tbsp butter in a skillet over medium heat. Add garlic and sauté for 30 seconds.
- Add spinach and cook until wilted. Remove from heat and mix with mozzarella cheese.
- Cut a pocket into each chicken breast.
- Stuff with spinach and cheese mixture and secure if needed.
- Season with salt and black pepper.
- Heat olive oil in a skillet and sear chicken for 3–4 minutes per side until golden.
- Transfer to oven and bake for 18–22 minutes until fully cooked.
- In a small pan, melt 2 tbsp butter and sauté garlic, then stir in honey and lemon juice.
- Drizzle garlic glaze over chicken before serving.
- Garnish with fresh parsley and serve warm.
Notes
- Use fresh mozzarella for creamier texture.
- Serve with roasted vegetables or a side salad for a complete meal.
