- 3 ripe peaches, sliced
- 4 cups seedless watermelon, cubed
- 2 tablespoons fresh mint, chopped
- 1 tablespoon lemon or lime juice
- 1 teaspoon extra-virgin olive oil (optional)
- Cracked black pepper, to taste
- Pinch of sea salt
Instructions
- Slice the peaches into wedges or bite-sized pieces.
- Cube the watermelon into 1-inch chunks.
- Roughly chop or tear the mint leaves.
- In a large bowl, combine peaches and watermelon.
- Sprinkle mint over the fruit.
- Add sea salt and cracked black pepper.
- Drizzle with lemon or lime juice and olive oil if using.
- Gently toss to combine.
- Chill for 15–20 minutes if desired, then serve.
Notes
- Use ripe, firm peaches for best flavor and texture.
- Optional: drizzle with honey for extra sweetness.
- Can be prepared a few hours ahead and chilled in the fridge.
