  • Chicken: 4 boneless, skinless chicken breasts, cut into bite-sized pieces
  • Seasoning: 1 packet fajita seasoning mix (1 oz)
  • Oil: 1 tablespoon olive oil
  • Vegetables: 1 red bell pepper (thinly sliced)
  • 1 green bell pepper (thinly sliced)
  • 1 yellow bell pepper (thinly sliced)
  • 1 medium onion (thinly sliced)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large pan, heat olive oil over medium heat. Add the bite-sized chicken pieces and sprinkle the fajita seasoning mix over them. Cook until the chicken is browned and cooked through (roughly 5–7 minutes).
  3. Add the sliced bell peppers and onions to the pan. Sauté for another 5 minutes until the veggies are tender but still crisp.
  4. Transfer the chicken and veggie mixture to a greased casserole dish, spreading evenly.
  5. Place in the preheated oven and bake for 20–25 minutes, or until everything is heated through and the flavors have melded nicely together.
