- Chicken: 4 boneless, skinless chicken breasts, cut into bite-sized pieces
- Seasoning: 1 packet fajita seasoning mix (1 oz)
- Oil: 1 tablespoon olive oil
- Vegetables: 1 red bell pepper (thinly sliced)
- 1 green bell pepper (thinly sliced)
- 1 yellow bell pepper (thinly sliced)
- 1 medium onion (thinly sliced)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large pan, heat olive oil over medium heat. Add the bite-sized chicken pieces and sprinkle the fajita seasoning mix over them. Cook until the chicken is browned and cooked through (roughly 5–7 minutes).
- Add the sliced bell peppers and onions to the pan. Sauté for another 5 minutes until the veggies are tender but still crisp.
- Transfer the chicken and veggie mixture to a greased casserole dish, spreading evenly.
- Place in the preheated oven and bake for 20–25 minutes, or until everything is heated through and the flavors have melded nicely together.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For longer storage, freeze the casserole before baking.
