- 1 lb large shrimp, peeled and deveined
- 2 cups corn kernels (fresh or frozen)
- 4 tablespoons unsalted butter, melted
- 5 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili flakes (optional)
- 1 tablespoon fresh lemon juice
- Salt and black pepper, to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine melted butter, minced garlic, smoked paprika, chili flakes, lemon juice, salt, and pepper.
- Add shrimp and corn kernels to the bowl and toss until evenly coated in the garlic butter mixture.
- Transfer the shrimp and corn mixture to a baking dish in a single layer.
- Bake for 10–12 minutes, or until the shrimp are pink and cooked through and the corn is tender.
- Remove from oven, garnish with fresh parsley, and serve immediately.
Notes
- For extra flavor, sprinkle grated Parmesan cheese before baking.
- You can use frozen shrimp—just thaw and pat dry before seasoning.
- This recipe works great with other vegetables like zucchini or asparagus.
