  • 1 lb Ground Beef
  • 1 cup Long-Grain White Rice (uncooked)
  • 2 tablespoons Olive Oil
  • 4 cloves Garlic (minced)
  • 1 teaspoon Onion Powder
  • 1 tablespoon Cajun Seasoning
  • 1 cup Cheddar Cheese (shredded)
  • 1/2 cup Parmesan Cheese (grated)
  • 2 cups Beef Broth
  • Salt and Pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned. Season with salt and pepper and drain excess fat if necessary.
  2. Push beef to one side. Add minced garlic to empty space and sauté 1 minute until fragrant.
  3. Sprinkle in onion powder and Cajun seasoning; stir to coat beef evenly.
  4. Pour in uncooked rice and beef broth. Stir to combine and bring to a gentle boil.
  5. Reduce heat to low, cover, and simmer 18-20 minutes until rice is cooked and liquid mostly absorbed, stirring occasionally.
  6. Remove from heat. Fold in Parmesan and Cheddar cheese until sauce is thick and creamy.
  7. Taste and adjust seasoning. Serve immediately, garnished with extra cheese or chopped parsley if desired.

Notes

  • Store leftovers in an airtight container in the fridge for up to 4 days.
  • To keep rice from drying out, add a splash of beef broth or water when reheating.
