Quick and flavorful garlic butter steak bites with zucchini, perfect for a low-carb weeknight dinner. Ready in just 15 minutes, this simple skillet meal delivers juicy steak, tender zucchini, and rich garlic butter flavor with minimal effort.

  • Total Time: 15 minutes
  • Yield: 2–3 servings

Ingredients

Scale
  • 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
  • 1 medium zucchini, cut into half-moons
  • 3 tbsp butter
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Pat the steak bites dry with paper towels and season with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add steak bites in a single layer and sear for 1–2 minutes per side until browned. Remove steak from skillet and set aside.
  4. Add butter to the same skillet. Once melted, add minced garlic and cook for about 30 seconds until fragrant.
  5. Add zucchini and cook for 3–5 minutes, stirring occasionally, until tender-crisp.
  6. Return steak bites to the skillet and toss to coat with garlic butter.
  7. Cook for an additional 1–2 minutes until steak is heated through.
  8. Garnish with fresh parsley if desired and serve immediately.

Notes

  • You can substitute zucchini with bell peppers or broccoli florets.
  • Adjust the amount of garlic to suit your taste.
  • Make sure the skillet is hot before adding steak to achieve a good sear.
