- 4 chicken breasts
- 2 cups baby carrots
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix olive oil, minced garlic, thyme, rosemary, salt, and pepper.
- Place the chicken breasts in a baking dish and coat with the garlic herb mixture.
- Add the baby carrots around the chicken in the dish.
- Bake for 25–30 minutes or until the chicken is cooked through and carrots are tender.
- Garnish with fresh parsley before serving.
Notes
- For added flavor, marinate the chicken in the garlic and herb mixture for a few hours before cooking.
