- 4 pieces boneless, skinless chicken breasts
- 1 pound baby potatoes, halved
- 1/4 cup olive oil
- 5 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- Salt, to taste
- Pepper, to taste
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix together olive oil, minced garlic, oregano, basil, thyme, salt, and pepper.
- Add the chicken and potatoes, tossing thoroughly to coat with the seasoning mixture.
- Transfer to a large baking dish, making sure potatoes are cut-side down.
- Sprinkle grated Parmesan evenly over chicken and potatoes.
- Bake for 40–45 minutes, or until chicken is cooked through and potatoes are tender.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, marinate chicken in the olive oil and garlic mixture for a few hours before cooking.
- Ensure potatoes are cut evenly to cook at the same rate.
- For a crispy top, broil the dish for an additional 2–3 minutes at the end of baking.
