This Ground Beef Hot Honey Bowl is a viral, high-protein recipe that combines taco-seasoned beef, roasted sweet potatoes, creamy cottage cheese, and a drizzle of sweet-spicy hot honey. It’s balanced, satisfying, and perfect for meal prep or a quick dinner!

  • Total Time: 55 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 1 lb lean ground beef (93% preferred)
  • 2 medium sweet potatoes, peeled and diced
  • 1 avocado, sliced
  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 yellow onion, diced
  • 2 tbsp olive oil
  • 1 taco seasoning packet (or 2 tbsp homemade)
  • 2 tbsp hot honey (store-bought or homemade)
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper, to taste
  • Optional garnishes: chopped cilantro, red pepper flakes, lime wedges

Instructions

  1. Roast Sweet Potatoes: Preheat oven to 400°F (200°C). Toss diced sweet potatoes with 1 tbsp olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread evenly on a baking sheet and roast for 40–45 minutes, stirring halfway.
  2. Cook Ground Beef: Heat remaining 1 tbsp olive oil in a skillet over medium heat. Add diced onion and cook until softened. Stir in ground beef, season with taco mix, and cook until browned and flavorful.
  3. Assemble Bowls: Divide roasted sweet potatoes among bowls. Top with taco beef, avocado slices, and a scoop of cottage cheese.
  4. Add Hot Honey: Drizzle hot honey over each bowl and garnish with fresh cilantro, red pepper flakes, or lime wedges if desired.

Notes

  • For extra creaminess, blend the cottage cheese before adding.
  • Adjust hot honey to your preferred spice level.
  • Store components separately in airtight containers for best texture when reheating.
  • Meal prep friendly: keeps well in the fridge for 3–4 days.
