- 1 lb lean ground beef (93% preferred)
- 2 medium sweet potatoes, peeled and diced
- 1 avocado, sliced
- 1 cup cottage cheese (low-fat or full-fat)
- 1 yellow onion, diced
- 2 tbsp olive oil
- 1 taco seasoning packet (or 2 tbsp homemade)
- 2 tbsp hot honey (store-bought or homemade)
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp cinnamon
- Salt and pepper, to taste
- Optional garnishes: chopped cilantro, red pepper flakes, lime wedges
Instructions
- Roast Sweet Potatoes: Preheat oven to 400°F (200°C). Toss diced sweet potatoes with 1 tbsp olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread evenly on a baking sheet and roast for 40–45 minutes, stirring halfway.
- Cook Ground Beef: Heat remaining 1 tbsp olive oil in a skillet over medium heat. Add diced onion and cook until softened. Stir in ground beef, season with taco mix, and cook until browned and flavorful.
- Assemble Bowls: Divide roasted sweet potatoes among bowls. Top with taco beef, avocado slices, and a scoop of cottage cheese.
- Add Hot Honey: Drizzle hot honey over each bowl and garnish with fresh cilantro, red pepper flakes, or lime wedges if desired.

- For extra creaminess, blend the cottage cheese before adding.
- Adjust hot honey to your preferred spice level.
