Ingredients

  • 250 g ground beef
  • 1 tbsp soy sauce
  • 1 tbsp hoisin sauce (or teriyaki sauce)
  • 1 garlic clove, minced
  • 2 red bell peppers, diced and sliced
  • 1 zucchini, sliced
  • 1 cup broccoli florets
  • 1 cup mushrooms, sliced
  • 1 cup cooked jasmine or basmati rice

Instructions

  1. In a skillet over medium heat, heat oil and sauté the minced garlic until fragrant. Add the ground beef and cook until browned.
  2. Mix in the soy sauce, hoisin (or teriyaki) sauce, and some of the red bell pepper. Let simmer briefly.
  3. In another skillet, heat olive oil over medium–high heat. Sauté the zucchini, broccoli florets, mushrooms, and remaining red bell pepper until tender-crisp. Season with salt and pepper.
  4. To serve, divide the warm rice among bowls and top with the ground beef mixture and sautéed vegetables.

Notes

  • Swap ground beef for ground chicken or turkey if desired.
  • Add chili flakes or sriracha for extra heat.
