- 250 g ground beef
- 1 tbsp soy sauce
- 1 tbsp hoisin sauce (or teriyaki sauce)
- 1 garlic clove, minced
- 2 red bell peppers, diced and sliced
- 1 zucchini, sliced
- 1 cup broccoli florets
- 1 cup mushrooms, sliced
- 1 cup cooked jasmine or basmati rice
Instructions
- In a skillet over medium heat, heat oil and sauté the minced garlic until fragrant. Add the ground beef and cook until browned.
- Mix in the soy sauce, hoisin (or teriyaki) sauce, and some of the red bell pepper. Let simmer briefly.
- In another skillet, heat olive oil over medium–high heat. Sauté the zucchini, broccoli florets, mushrooms, and remaining red bell pepper until tender-crisp. Season with salt and pepper.
- To serve, divide the warm rice among bowls and top with the ground beef mixture and sautéed vegetables.
Notes
- Swap ground beef for ground chicken or turkey if desired.
- Add chili flakes or sriracha for extra heat.
- Use leftover rice to save time.
