- 1 lb ground turkey (lean)
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
- Salt and pepper to taste
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon chili powder (optional)
- 1/2 cup chicken broth
- 2 cups baby spinach, roughly chopped
- 2 tablespoons chopped fresh parsley
Instructions
- Heat olive oil in a large skillet over medium heat. Add ground turkey and cook for 5–7 minutes, breaking it apart with a spoon, until browned. Season lightly with salt and pepper. Remove from skillet and set aside.
- In the same skillet, add diced onion and cook for 3–4 minutes until softened. Stir in minced garlic and cook for 30 seconds until fragrant.
- Add diced sweet potatoes, smoked paprika, thyme, and chili powder (if using). Stir well to coat.
- Pour in chicken broth, cover, and let cook for 8–10 minutes, stirring occasionally, until sweet potatoes are tender.
- Return cooked turkey to the skillet and stir to combine. Add spinach and cook for 1–2 minutes until wilted.
- Taste and adjust seasoning as needed. Garnish with fresh parsley and serve warm.
