Savory Ground Turkey and Sweet Potato Skillet with Garlic and Herbs  a hearty, healthy one-pan meal that’s easy to prepare and packed with flavor.

Ingredients

  • 1 lb ground turkey (lean)
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
  • Salt and pepper to taste
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon chili powder (optional)
  • 1/2 cup chicken broth
  • 2 cups baby spinach, roughly chopped
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground turkey and cook for 5–7 minutes, breaking it apart with a spoon, until browned. Season lightly with salt and pepper. Remove from skillet and set aside.
  2. In the same skillet, add diced onion and cook for 3–4 minutes until softened. Stir in minced garlic and cook for 30 seconds until fragrant.
  3. Add diced sweet potatoes, smoked paprika, thyme, and chili powder (if using). Stir well to coat.
  4. Pour in chicken broth, cover, and let cook for 8–10 minutes, stirring occasionally, until sweet potatoes are tender.
  5. Return cooked turkey to the skillet and stir to combine. Add spinach and cook for 1–2 minutes until wilted.
  6. Taste and adjust seasoning as needed. Garnish with fresh parsley and serve warm.
