Ground Turkey Sweet Potato Bake is the perfect healthy dinner recipe. This easy baked casserole is made with sweet potatoes, ground turkey, zucchini, parmesan cheese, and simple seasonings. It’s a low-effort, gluten-free meal packed with protein and veggies that’s comforting and nourishing.

Ingredients

  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and chopped
  • 2 small zucchini, sliced and quartered
  • 2/3 cup shredded parmesan cheese
  • 1 1/2 tsp garlic powder
  • 1 tsp rosemary
  • 5 tbsp olive oil
  • Salt & pepper, to taste

Instructions

  1. Preheat the oven to 400°F.
  2. Peel and chop sweet potatoes. Place them in a large baking dish and toss with 2 tbsp olive oil, 1/2 tsp garlic powder, 1/2 tsp rosemary, salt, and pepper.
  3. Bake for 30 minutes.
  4. While the sweet potatoes bake, heat a pan over medium heat. Cook ground turkey with 1 tbsp olive oil, 1 tsp garlic powder, 1/2 tsp rosemary, salt, and pepper until browned.
  5. Chop zucchini into slices and quarter them.
  6. Remove sweet potatoes from the oven. Add cooked turkey and zucchini, then mix well.
  7. Bake for 10 minutes.
  8. Remove from oven, drizzle with remaining 2 tbsp olive oil, mix evenly, and top with parmesan cheese.
  9. Bake for another 10 minutes, until cheese is melted.
  10. Remove from oven and enjoy.
