- 1 lb ground turkey
- 2 medium sweet potatoes, peeled and chopped
- 2 small zucchini, sliced and quartered
- 2/3 cup shredded parmesan cheese
- 1 1/2 tsp garlic powder
- 1 tsp rosemary
- 5 tbsp olive oil
- Salt & pepper, to taste
Instructions
- Preheat the oven to 400°F.
- Peel and chop sweet potatoes. Place them in a large baking dish and toss with 2 tbsp olive oil, 1/2 tsp garlic powder, 1/2 tsp rosemary, salt, and pepper.
- Bake for 30 minutes.
- While the sweet potatoes bake, heat a pan over medium heat. Cook ground turkey with 1 tbsp olive oil, 1 tsp garlic powder, 1/2 tsp rosemary, salt, and pepper until browned.
- Chop zucchini into slices and quarter them.
- Remove sweet potatoes from the oven. Add cooked turkey and zucchini, then mix well.
- Bake for 10 minutes.
- Remove from oven, drizzle with remaining 2 tbsp olive oil, mix evenly, and top with parmesan cheese.
- Bake for another 10 minutes, until cheese is melted.
- Remove from oven and enjoy.

- This recipe is naturally gluten-free.
- Use freshly grated parmesan for best flavor.
