  • 1/4 cup vegetable oil
  • 1 cup granulated sugar
  • 1/3 cup brown sugar
  • 2/3 cup cocoa powder
  • 2 cold eggs
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 cup all-purpose flour
  • 15 Oreos (plus 5 extra for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper and set aside.
  2. In a microwave-safe bowl, melt butter, oil, and both sugars together in 30-second intervals, stirring between each until fully melted and smooth. Microwave for another 1 minute and stir vigorously to help dissolve the sugar completely.
  3. Whisk in the eggs one at a time, then add vanilla extract. The mixture should start to pull away slightly from the bowl.
  4. Fold in cocoa powder, flour, and salt just until combined — do not overmix.
  5. Pour half of the brownie batter into the prepared pan and spread evenly.
  6. Place 15 Oreos evenly on top of the batter, then pour the remaining brownie batter over them and smooth the top.
  7. Top with 5 crushed Oreos and bake for 30 minutes, or until the center is just set and a toothpick inserted comes out with moist crumbs.
  8. Allow brownies to cool fully on a wire rack before slicing for that perfect crinkly top.
