- 2/3 cup butter
- 1/4 cup vegetable oil
- 1 cup granulated sugar
- 1/3 cup brown sugar
- 2/3 cup cocoa powder
- 2 cold eggs
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1/2 cup all-purpose flour
- 15 Oreos (plus 5 extra for topping)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper and set aside.
- In a microwave-safe bowl, melt butter, oil, and both sugars together in 30-second intervals, stirring between each until fully melted and smooth. Microwave for another 1 minute and stir vigorously to help dissolve the sugar completely.
- Whisk in the eggs one at a time, then add vanilla extract. The mixture should start to pull away slightly from the bowl.
- Fold in cocoa powder, flour, and salt just until combined — do not overmix.
- Pour half of the brownie batter into the prepared pan and spread evenly.
- Place 15 Oreos evenly on top of the batter, then pour the remaining brownie batter over them and smooth the top.
- Top with 5 crushed Oreos and bake for 30 minutes, or until the center is just set and a toothpick inserted comes out with moist crumbs.
- Allow brownies to cool fully on a wire rack before slicing for that perfect crinkly top.
Notes
- For a festive Halloween twist, use orange-filled Oreos or drizzle with white chocolate and candy eyes once cooled.
- Store brownies in an airtight container at room temperature for up to 4 days, or freeze for up to 2 months.
- Serve slightly warmed with a scoop of vanilla ice cream for an extra indulgent treat.
