- 2 cups fresh spinach, chopped
- 1 can (14 oz) artichoke hearts, drained and chopped
- 1 cup cottage cheese
- 2 cups cooked chicken breast, shredded
- ½ cup Greek yogurt
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp onion powder
- 1 tsp garlic powder
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a large mixing bowl, combine shredded chicken, chopped spinach, and chopped artichoke hearts.
- In a separate bowl, mix cottage cheese, Greek yogurt, mozzarella cheese, and Parmesan cheese until well combined.
- Stir in minced garlic, onion powder, garlic powder, salt, and pepper into the cheese mixture.
- Fold the cheese mixture into the chicken and vegetable mixture until everything is well coated.
- Spoon mixture into a greased 9×13-inch baking dish and spread evenly.
- Bake for 25-30 minutes, or until top is golden and bubbly.
- Remove from oven, let cool slightly, garnish with fresh herbs, and serve warm.
