- 8 oz penne pasta
- 1 lb lean ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes (with juices)
- 1 cup low-sodium beef broth
- 1/2 cup plain Greek yogurt
- 1/4 cup grated Parmesan cheese
- 1 tbsp Italian seasoning
- Salt and pepper to taste
- Fresh basil or parsley for garnish
- Olive oil (for cooking)
Instructions
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the onion and garlic, sauté until fragrant.
- Add the ground beef and cook until browned, breaking it apart with a spoon.
- Stir in diced tomatoes, beef broth, Greek yogurt, Parmesan cheese, Italian seasoning, salt, and pepper. Simmer for 5–7 minutes, stirring occasionally.
- Add the cooked pasta to the skillet and toss until well combined and coated with the creamy sauce.
- Garnish with fresh basil or parsley before serving.

- Add vegetables like spinach or bell peppers for extra nutrition.
- Use whole wheat pasta for added fiber.
- For a richer flavor, sprinkle extra Parmesan on top before serving.
