Instructions

  1. Preheat oven to 375°F (190°C).
  2. Lightly grease a baking dish with cooking spray or olive oil.
  3. In a large bowl, combine cottage cheese, broccoli, bell pepper, zucchini, cherry tomatoes, spinach, and red onion.
  4. In a separate bowl, whisk together eggs, olive oil, garlic powder, onion powder, black pepper, salt, and oregano.
  5. Pour the egg mixture over the vegetables and stir until evenly coated.
  6. Transfer the mixture to the prepared baking dish and spread evenly.
