This Hobo Casserole with Ground Beef is pure comfort food – tender potatoes, savory beef, and melted cheese baked together in one hearty dish the whole family will love.

  • Total Time: 1 hour 5 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4–5 medium potatoes, thinly sliced
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 1/2 cup beef broth or water
  • 1/4 cup milk (optional, for creaminess)
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a skillet, heat olive oil over medium heat. Add ground beef and cook until browned (5–7 minutes). Drain excess fat.
  3. Add onion and garlic to the skillet. Cook 3–4 minutes until softened.
  4. Spread beef mixture evenly in the baking dish. Layer thinly sliced potatoes on top, seasoning with salt, pepper, Italian seasoning, and paprika.
  5. Sprinkle shredded cheddar and Parmesan cheese over beef. Pour beef broth (or water) around the edges. Optionally drizzle with milk for creaminess.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 15–20 minutes, until potatoes are tender and cheese is golden and bubbly.
  7. Garnish with parsley and serve hot.

Notes

  • Brown the ground beef well and drain excess fat for best flavor and texture.
