These Homemade McGriddle Muffins taste just like the fast-food favorite fluffy pancake muffins baked with sausage, egg, and melty cheese. Sweet, savory, and meal-prep friendly.

    • 1 tbsp sugar
    • 1 tsp baking powder
    • ½ tsp salt
    • 1 cup milk
    • 1 egg
    • 2 tbsp melted butter
    • 2 tbsp maple syrup

    • For the Filling:
    • 6 sausage patties, cooked and flattened
    • 6 eggs, scrambled or fried
    • 6 slices American cheese

  • Optional Add-ins:
  • Sharp cheddar cheese
  • Turkey sausage
  • Drizzle of hot honey

  1. Preheat oven to 350°F (175°C). Grease a muffin tin.
  2. In a bowl, whisk flour, sugar, baking powder, and salt.
  3. Add milk, egg, melted butter, and maple syrup. Stir until just combined (do not overmix).
  4. Cook sausage patties until browned. Drain grease and flatten slightly.
  5. Scramble or fry eggs to your preference.
  6. Spoon a layer of batter into each muffin cup.
  7. Add a sausage patty, a portion of egg, and half a slice of cheese.
  8. Cover with additional batter until just filled.
  9. Bake for 18–20 minutes, until muffins are golden brown and puffed.
  10. Let cool slightly before serving.

Notes

  • Grease muffin tin well to prevent sticking.
  • Add diced jalapeños and pepper jack cheese for a Tex-Mex twist.
  • Sprinkle cinnamon sugar on top for a sweeter version.
  • Store in the fridge up to 4 days or freeze individually for 2 months.
