- For the Mashed Potatoes:
- 3 medium potatoes, peeled and cubed
- 2 tbsp butter
- ¼ cup warm milk
- Salt to taste
- For the Broccolini:
- 1 bunch broccolini
- 1 tsp olive oil
- Salt & pepper to taste
Instructions
- Cook the Potatoes: Boil potatoes for 12–15 minutes until soft. Mash with butter, warm milk, and salt until smooth and creamy.
- Prepare the Broccolini: Steam or boil for 4–5 minutes until tender and bright green. Drizzle with olive oil and season with salt & pepper.
- Cook the Salmon: Pat salmon dry and season with Cajun seasoning, paprika, salt, and pepper. Heat olive oil in a skillet over medium-high heat. Sear salmon 3–4 minutes per side until browned and crisp around the edges.
- Make the Honey-Garlic Butter: In the same pan, melt butter. Add garlic, honey, and lemon juice. Stir until glossy and fragrant. Spoon the sauce over the salmon.
- Assemble the Dish: Spread mashed potatoes on a plate. Place salmon fillets on top and add broccolini on the side. Drizzle extra sauce and sprinkle chopped parsley.
Notes
- Add extra honey for a sweeter glaze.
- Use skin-on salmon for more crispiness.
- Yukon gold potatoes make the creamiest mash.
- Broccolini can be roasted instead of steamed for extra flavor.
