  • 2 salmon fillets
  • 1 tbsp olive oil
  • 1 tsp Cajun seasoning
  • ½ tsp smoked paprika
  • Salt & black pepper to taste
  • For the Honey-Garlic Butter Sauce:
  • 2 tbsp butter
  • 1 tbsp honey
  • 2 garlic cloves, minced
  • 1 tsp lemon juice
  • 1 tbsp chopped parsley
  • For the Mashed Potatoes:
  • 3 medium potatoes, peeled and cubed
  • 2 tbsp butter
  • ¼ cup warm milk
  • Salt to taste
  • For the Broccolini:
  • 1 bunch broccolini
  • 1 tsp olive oil
  • Salt & pepper to taste

Instructions

  1. Cook the Potatoes: Boil potatoes for 12–15 minutes until soft. Mash with butter, warm milk, and salt until smooth and creamy.
  2. Prepare the Broccolini: Steam or boil for 4–5 minutes until tender and bright green. Drizzle with olive oil and season with salt & pepper.
  3. Cook the Salmon: Pat salmon dry and season with Cajun seasoning, paprika, salt, and pepper. Heat olive oil in a skillet over medium-high heat. Sear salmon 3–4 minutes per side until browned and crisp around the edges.
  4. Make the Honey-Garlic Butter: In the same pan, melt butter. Add garlic, honey, and lemon juice. Stir until glossy and fragrant. Spoon the sauce over the salmon.
  5. Assemble the Dish: Spread mashed potatoes on a plate. Place salmon fillets on top and add broccolini on the side. Drizzle extra sauce and sprinkle chopped parsley.
