Instructions
- Preheat oven to 400°F (200°C).
- Peel and cube sweet potatoes into 1-inch pieces.
- Cook sausage in a skillet over medium heat until browned, about 8-10 minutes, then slice into bite-sized pieces.
- In a large bowl, mix sweet potatoes, sausage, olive oil, garlic powder, salt, and pepper; toss to coat.
- Spread mixture on a parchment-lined baking sheet and roast for 30-35 minutes, stirring halfway through.
- Remove from oven, garnish with fresh herbs, and serve.
