- 1 lb ground beef (80/20 recommended)
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 1 tbsp Dijon mustard
- 1 tbsp Worcestershire sauce
- 2 cups beef broth
- 1 pkg refrigerated cheese tortellini
- 1 cup sour cream
- 2 tbsp olive oil (optional)
- Salt, to taste
- Black pepper, to taste
- 2 tbsp chopped parsley (for garnish)
Instructions
- Heat a large skillet over medium-high heat. Add the ground beef and cook for 5–7 minutes, breaking it apart, until browned.
- Add the diced onion and minced garlic. Sauté for 2–3 minutes until softened and fragrant.
- Stir in the Dijon mustard and Worcestershire sauce. Pour in the beef broth, scraping up any browned bits from the pan.
- Add the cheese tortellini, cover, and simmer for 5–7 minutes until the tortellini are tender.
- Remove from heat and gently fold in the sour cream until the sauce is creamy. Season with salt and pepper to taste.
- Garnish with chopped parsley and serve warm.
Notes
- Ground turkey or plant-based meat can be substituted if desired.
- If the sauce becomes too thick, add a splash of beef broth or water to loosen it.
- Frozen tortellini can be used but may require a few extra minutes of cooking.
