  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 2 cups beef broth
  • 1 pkg refrigerated cheese tortellini
  • 1 cup sour cream
  • 2 tbsp olive oil (optional)
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp chopped parsley (for garnish)

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground beef and cook for 5–7 minutes, breaking it apart, until browned.
  2. Add the diced onion and minced garlic. Sauté for 2–3 minutes until softened and fragrant.
  3. Stir in the Dijon mustard and Worcestershire sauce. Pour in the beef broth, scraping up any browned bits from the pan.
  4. Add the cheese tortellini, cover, and simmer for 5–7 minutes until the tortellini are tender.
  5. Remove from heat and gently fold in the sour cream until the sauce is creamy. Season with salt and pepper to taste.
  6. Garnish with chopped parsley and serve warm.

Notes

  • Ground turkey or plant-based meat can be substituted if desired.
  • If the sauce becomes too thick, add a splash of beef broth or water to loosen it.
  • Frozen tortellini can be used but may require a few extra minutes of cooking.
