- 4 cups cooked chicken, cubed (rotisserie or breast)
- 3/4 cup no added sugar marinara sauce
- 1 tablespoon Italian seasoning
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- 2 tablespoons almond flour
- 3/4 cup grated Parmesan cheese
- 1 1/2 cups shredded mozzarella cheese
- 3/4 cup finely crushed parmesan crisps or pork rinds
- Non-stick cooking spray
Instructions
- Preheat oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1 minute until fragrant.
- Stir in Italian seasoning, marinara sauce, almond flour, and chicken. Cook for 5 minutes.
- Transfer mixture to a greased 9×13-inch casserole dish.
- Top with Parmesan cheese, mozzarella cheese, and crushed parmesan crisps.
- Bake for 25–30 minutes until cheese is melted and bubbly.
- Let rest a few minutes before serving.
Notes
- Use no-sugar-added marinara to keep carbs low.
- Pork rinds add extra crunch if parmesan crisps aren’t available.
- Leftovers reheat well and are great for meal prep.
