Ingredients

  • 2 cups shredded Swiss cheese
  • 1/2 pound sliced corned beef deli meat
  • 1 cup sauerkraut
  • 1/4 cup mayonnaise
  • 1 tsp Worcestershire sauce
  • 1 1/2 tbsp sugar-free ketchup
  • 2 tsp Swerve confectioner’s sugar substitute
  • 1 tbsp horseradish sauce
  • 1 pinch paprika

Instructions

  1. Preheat oven to 400°F.
  2. Arrange cheese into 8 circles on parchment-lined baking sheet. Use two sheets if needed.
  3. Bake 6–8 minutes until edges begin to brown and crisp.
  4. While baking, stir together mayonnaise, Worcestershire sauce, sugar-free ketchup, Swerve, horseradish, and paprika to make the dressing.
  5. Remove cheese circles from oven and let cool 1 minute.
  6. Top each circle with corned beef slices, sauerkraut, and a drizzle of dressing.
  7. Quickly fold cheese over filling before it hardens.
  8. Allow roll-ups to cool and crisp up before serving.
