- 2 cups shredded Swiss cheese
- 1/2 pound sliced corned beef deli meat
- 1 cup sauerkraut
- 1/4 cup mayonnaise
- 1 tsp Worcestershire sauce
- 1 1/2 tbsp sugar-free ketchup
- 2 tsp Swerve confectioner’s sugar substitute
- 1 tbsp horseradish sauce
- 1 pinch paprika
Instructions
- Preheat oven to 400°F.
- Arrange cheese into 8 circles on parchment-lined baking sheet. Use two sheets if needed.
- Bake 6–8 minutes until edges begin to brown and crisp.
- While baking, stir together mayonnaise, Worcestershire sauce, sugar-free ketchup, Swerve, horseradish, and paprika to make the dressing.
- Remove cheese circles from oven and let cool 1 minute.
- Top each circle with corned beef slices, sauerkraut, and a drizzle of dressing.
- Quickly fold cheese over filling before it hardens.
- Allow roll-ups to cool and crisp up before serving.
Notes
- Use parchment paper to prevent cheese from sticking.
- Experiment with different cheeses for flavor variation.
- Do not overcook cheese to maintain flexibility for rolling.
