- 4 boneless, skinless chicken breasts
- 1/2 cup fresh lime juice
- 1/2 cup fresh orange juice
- 2 tablespoons fresh lemon juice
- 1/4 cup soy sauce
- 1/4 cup olive oil
- 2 tablespoons honey
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Zest of 1 lime
- Zest of 1 orange
- Fresh cilantro for garnish
Instructions
- Combine lime juice, orange juice, lemon juice, soy sauce, olive oil, honey, garlic, cumin, coriander, salt, pepper, lime zest, and orange zest to make the marinade.
- Place chicken in a resealable bag or shallow dish, pour marinade over, seal, and refrigerate at least 2 hours.
- Preheat grill to medium-high, lightly oil grates.
- Remove chicken from marinade, discard excess, and grill 6-7 minutes per side until internal temperature reaches 165°F.
- Let rest 5 minutes, garnish with cilantro, and serve.
Notes
- Add a pinch of red pepper flakes for heat.
- Pairs well with grilled pineapple or mango salsa.
- Can use a stovetop grill pan if outdoor grill is unavailable.
- Pound chicken to even thickness for consistent cooking.
