  • 2 cups rotini pasta, cooked and drained
  • 1 cup sweet corn kernels (fresh, frozen, or canned)
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup milk
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat.
  2. Season beef with garlic powder, onion powder, salt, and pepper. Stir in ranch seasoning mix and set aside.
  3. In a saucepan over medium heat, combine cream cheese, sour cream, and milk. Stir until smooth and melted.
  4. Add shredded cheddar cheese and stir until fully melted and creamy. Season to taste.
  5. Preheat oven to 375°F (190°C).
  6. In a large bowl, combine cooked rotini, beef mixture, corn, and cheese sauce. Mix well.
  7. Transfer to a greased 9×13 baking dish and spread evenly. Top with extra cheddar cheese if desired.
  8. Bake for 20–25 minutes until bubbly and golden on top.
  9. Garnish with parsley and serve.
