- 1 lb ground beef
- 2 cups rotini pasta, cooked and drained
- 1 cup sweet corn kernels (fresh, frozen, or canned)
- 1 packet ranch seasoning mix
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese, softened
- 1/2 cup sour cream
- 1 cup milk
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat.
- Season beef with garlic powder, onion powder, salt, and pepper. Stir in ranch seasoning mix and set aside.
- In a saucepan over medium heat, combine cream cheese, sour cream, and milk. Stir until smooth and melted.
- Add shredded cheddar cheese and stir until fully melted and creamy. Season to taste.
- Preheat oven to 375°F (190°C).
- In a large bowl, combine cooked rotini, beef mixture, corn, and cheese sauce. Mix well.
- Transfer to a greased 9×13 baking dish and spread evenly. Top with extra cheddar cheese if desired.
- Bake for 20–25 minutes until bubbly and golden on top.
- Garnish with parsley and serve.
Notes
- Add vegetables like bell peppers or green onions for extra flavor.
- For a spicy kick, add jalapeños or hot sauce.
- Store leftovers in the fridge up to 3 days and reheat as needed.
