A comforting casserole combining hearty meatloaf and creamy mashed potatoes, topped with cheddar cheese and green onions for the ultimate family dinner.

  • 1.5 pounds ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Potato Layer
  • 2 pounds potatoes, peeled and sliced
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 2 tablespoons butter
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch casserole dish.
  2. Boil peeled, sliced potatoes in salted water for 15 minutes until fork-tender. Drain well.
  3. In a large bowl, combine ground beef, onion, garlic, breadcrumbs, 1/4 cup milk, egg, Worcestershire sauce, salt, and pepper. Mix until just combined.
  4. Press meat mixture evenly into the bottom of the dish and spread ketchup on top.
  5. Return potatoes to the pot, add butter, sour cream, milk, and season to taste. Mash until smooth.
  6. Spread mashed potatoes over meatloaf, top with cheddar cheese.
  7. Bake uncovered for 25–30 minutes until cheese is melted and bubbly.
  8. Remove from oven, top with chopped green onions, slice, and serve hot.

Notes

  • Store leftovers in the refrigerator for up to 4 days or freeze for 2 months.
  • Reheat in the microwave or oven until warmed through.
  • Try adding crispy bacon or BBQ sauce for a fun twist!
