- Meatloaf Layer
- 1.5 pounds ground beef
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 large egg
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Potato Layer
- 2 pounds potatoes, peeled and sliced
- 1/2 cup sour cream
- 1/4 cup milk
- 2 tablespoons butter
- 1 cup shredded cheddar cheese
- 1/4 cup chopped green onions
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch casserole dish.
- Boil peeled, sliced potatoes in salted water for 15 minutes until fork-tender. Drain well.
- In a large bowl, combine ground beef, onion, garlic, breadcrumbs, 1/4 cup milk, egg, Worcestershire sauce, salt, and pepper. Mix until just combined.
- Press meat mixture evenly into the bottom of the dish and spread ketchup on top.
- Return potatoes to the pot, add butter, sour cream, milk, and season to taste. Mash until smooth.
- Spread mashed potatoes over meatloaf, top with cheddar cheese.
- Bake uncovered for 25–30 minutes until cheese is melted and bubbly.
- Remove from oven, top with chopped green onions, slice, and serve hot.
Notes
- Store leftovers in the refrigerator for up to 4 days or freeze for 2 months.
- Reheat in the microwave or oven until warmed through.
- Try adding crispy bacon or BBQ sauce for a fun twist!
