  • 1/4 cup Kalamata olives, sliced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped
  • Juice of 1/2 lemon

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and garlic; sauté until fragrant and softened.
  3. Add ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat if needed.
  4. Stir in zucchini, bell pepper, and cherry tomatoes. Cook for 5–7 minutes until vegetables soften.
  5. Add Kalamata olives, oregano, cumin, paprika, salt, and black pepper. Stir well and cook for another 2–3 minutes.
  6. Remove from heat and mix in crumbled feta cheese and fresh parsley.
  7. Squeeze fresh lemon juice over the stir fry before serving.
